Yeast

Yeast....you all know what they say, brewers make wort, yeast makes beer.

If you have ever been unfortunate to use a a no-name yeast like those under a tin of goo or an improperly packaged or stored yeast, you know what I mean.

Dried yeasts, when from a reliable manufacturer such as Fermentis or Lallemand and in factory packaging are a great standby, brilliant workhorse and inexpensive. They have a very long life if stored correctly and are easy to use, preferably by rehydrating first (see manufacturers websites.

The best variety comes from liquid yeasts, these are specific strains chosen for specific characteristics. One vial or pack is sufficient for 18 litres (US 5 gal) of all but strong worts, but many brewers, quite sensibly make a starter.
