XPA (Base Extract)
An easy drinking beer in the eXtraPale Ale style.
The kit consists of 2kg of Extra Light Malt Extract and 1 kg Brew Enhancer 1. This will give about 25 litres of 4% beer (or less of higher ABV) and for hopping 100g of the multi purpose Mosaic. Mosaic hops feature complex but clean flavor characteristics and are known for their triple-use profile encompassing bittering, flavor and aroma. They have high alpha acids but low cohumulone which makes them pleasantly hoppy, carrying flavors of mango, pine, citrus and herbs and aromas of tropical and stone fruit.
The method used is the Kegland 15 minute boil.
First add the cracked Gladiator in supplied grain bag to 5 litres of about 70C water in a pot of at least 15 litres capacity, the malster has already done the conversion this is just for sugars and colour. Best colour obtained after 30 minutes of steeping. Drain the bag, do not squeeze you are likely to extract tannins and clean for later use.
Simply dissolve the extracts in the steeped liquid above and bring to the boil, at boil add 50gm of Mosaic (supplied) in a hop bag (supplied) and rapidly boil for 15 minutes taking time to smell those wonderful aromas. Take off the heat and and add 8 litres of icy cold water to rapidly chill, transfer to fermentor and top up to required volume or gravity.
Optional, at end of boil add 1.5 litres of cold water and 50g of Mosaic, or other hop of your choice in a hop bag and whirlpool (create a vortex with a paddle), this will add additional aroma without bitterness, then add 6.5 litres icy cold water to rapidly chill, transfer to fermentor and top up to required volume or gravity.
Optional at near fermentation end add 50g of Mosaic, or other hop of your choice in a hop bag for 2 to 3 days dry hopping.
Ferment with yeast of your choice, suggested yeasts are Cali for a neutral character or Pomona try bring out additional fruity esters, yeast not included,
