In Czechzia they pour Pils with head, sometimes massive head to preserve and pronounce the hop character. To achieve this they use a special side pull tap that first (at the pourers discretion and the drinkers instruction) forces the beer through a screen to create the foam and then just lets the beer flow under the foam.
